Julian Gagnon

Chef & Co-Founder

Raised in hospitality by his chef father, Julian grew up immersed in food service from an early age. As a young chef, he worked on numerous restaurant projects in his hometown of Calgary, Alberta, developing a strong foundation in both kitchen operations and restaurant culture. He later relocated to Washington, DC, where he helped launch and lead several notable concepts, including Le Mont Royal, Mercy Me, and his own flagship restaurant, Butterworth's. With a long-standing ambition to open a restaurant in his dream city of Montreal, Julian now brings over twelve years of culinary and restaurant management experience to the project. His approach blends technical skill, leadership, and a deep respect for hospitality, shaped by years of hands-on work across diverse kitchens and concepts.

David Bernard

Executive Chef

Born into a family of restaurateurs, David Bernard has been immersed in the culinary world from an early age. He currently leads the kitchen at Bungalow, a restaurant located in Montreal's Plateau-Mont-Royal neighbourhood. Over the past eight years, he has honed his craft in several of the city's most respected establishments, including Le Club Chasse et Pêche, Pastaga, Place Carmin, and Joséphine. Through these experiences, David has developed a strong expertise in kitchen management, both creatively and operationally. Accustomed to high-pressure environments, he has successfully led and motivated kitchen teams, managed high-volume service without compromising quality, and maintained strict control over food costs while continuously optimizing resources. Beyond his professional background, David is a deeply passionate and committed chef, driven by an ongoing curiosity. Constantly exploring new trends and techniques, he fuels his creativity both inside and outside the kitchen: through reading the work of established and emerging chefs, experimenting with new culinary approaches, participating in culinary competitions, and staying actively informed through documentaries and reports on the local and international food scenes.
